Ingredients

  • cucumber - 2 no.
  • cream cheese- 150 gms
  • fresh finely chopped thyme- 1/2 tsp
  • fresh finely chopped rosemary- 1/4 tsp
  • fresh parsley- 1 tsp
  • garlic powder- a inch
  • salt to taste
  • white pepper to taste
  • olives for garnishing

Instructions

  • Peel the cucumber and cut 1 cm thick round slices.
  • Make a small cavity in the center making sure that you do not scrape it out till the bottom. keep them aside.
  • In a bowl, add cream cheese and whisk it well until smooth, piping consistency.
  • Mix in the herbs and the seasoning. Check for seasoning.
  • Transfer the cream cheese dressing into a piping bag and fill it in the cucumber cavities.
  • Garnish it with a thinly sliced piece of olive and a small leaf of parsley and a bell pepper julienne (optional).
  • Keep it in the refrigerator for half an hour to let it cool and then serve.

Notes/Tips

1. Use freshly chopped herbs instead of dried herbs for a better flavor. 2. Use of garlic powder is optional, if you do not like the flavor of garlic then you can skip it but do not exceed it's quantity.
