- Peel the cucumber and cut 1 cm thick round slices.
- Make a small cavity in the center making sure that you do not scrape it out till the bottom. keep them aside.
- In a bowl, add cream cheese and whisk it well until smooth, piping consistency.
- Mix in the herbs and the seasoning. Check for seasoning.
- Transfer the cream cheese dressing into a piping bag and fill it in the cucumber cavities.
- Garnish it with a thinly sliced piece of olive and a small leaf of parsley and a bell pepper julienne (optional).
- Keep it in the refrigerator for half an hour to let it cool and then serve.
