  • For Jalebi: Granola flour
  • Cornstarch /cornflour
  • Besan (gram flour)
  • Baking soda

  • Haldi (Turmeric)
  • Thick curd
  • Lukewarm water

  • Milk
  • Sugar
  • Green cardamom
  • Saffron
  • Blanched Almond
  • Blanched Pistachios
  • Strawberry pulp
  • For jalebi vanilla cupcake
  • Granola flour
  • Baking powder
  • Salt

  • Crushed Jalebi(granola)
  • Strawberry Berry yogurt
  • Vanilla extract

Instructions

  • "From my Plate to the hearts of all women's"... For granola Jalebi: 1.in a mixing bowl, mix granola flour , corn flour. 2.then add curd and water. 3.mix well in round circular directions for 4 minutes. 4.now add baking soda and give a gentle mix.
  • 5.now pour this batter in the tomato ketchup bottles carefully. 6.heat oil in a pan and add 1 tbsp of ghee. 7.squeeze the bottle and make round spirals with the Batter.
  • 8.when one side is partly cooked, turn over and fry the other side. 9.fry till the jalebis are a light golden. 10.then immediately drop the fried jalebis in the warm sugar syrup for 30 seconds (1 string consistency).
  • 11.finally, serve jalebis hot, warm or at room Temperature.
  • For strawberry rabri : 1.Boil the milk in a wide, heavy-based pan. 2.Add the sugar and cardamom and simmer over low heat. 3.Do not stir too often, as a layer of cream should form over it.
  • 4.After the layer is formed, push it away from the sides towards the centre, stir the milk below it gently to avoid scorching. 5.Repeat the process till one-third of milk is left. 6.The time taken will depend on the richness of the milk and The Vessel.
  • 7.The wider the vessel and the richer the milk, the faster it will thicken, then add strawberry pulp & stir continue. 8.When done, the colour changes to a beige-cream, and the cream that was pushed aside, collects in Layers.
  • 9.Remove from heat. When cool, transfer to a serving dish. 10.Garnish with vark leaves(silver leaves) and nuts. Chill and Serve.
  • For jalebi cupcake : 1.To a mixing bowl - add granola flour, baking powder, baking soda and salt to it. 2.Whisk it well for even mixing.To another bowl add olive oil , add sugar to it.
  • 3.Add strawberry yogurt to it and beat until fluffy. 4.Add milk and vanilla essence to it.Beat it once again. 5.Now add this mixture to flour mixture.Whisk it.
  • 6.Do not over beat , once it gets together stop it.Gather it and set aside.Line muffin liners in a muffin pan.Preheat oven at 180 deg C.
  • 7.Using an icecream scooper scoop out and add to liner till 3/4th as it rises well.Bake in preheated oven at 180 deg C for 20 mins or a tooth pick inserted in the middle comes out Clean.
  • 8.Serve these granola jalebi with Chilled strawberry Rabri. *On this special occasion, make something sweet for the Wonder Women of your life and give a sweet Surprise*

Notes/Tips

*Give 2 hours rest to Jalebi batter. *Grind granola very Finely. *If you want to make cupcakes with egg, replace the yogurt with Egg.
