Ingredients

  • 1 cup Maida 1 tsp ghee
  • 1 tsp powdered sugar as per taste Salt
  • as required Adequate water to make a soft dough
  • as required Oil to grease
  • 6 eggs 1 medium size onion sliced
  • 1 medium size carrot julienned 1 green capsicum ju
  • 1 medium size beetroot julienned
  • 2-3 green chillies chopped fine
  • 1 lime juice as per taste Salt as required Oil to

Instructions

  • In a bowl add Maida, powdered sugar, salt and ghee and mix well. Add adequate water to make a soft dough.
  • Grease with oil and keep it covered for 10-15 mins
  • In a bowl add julienned carrots, green capsicum, chopped onions and julienned beetroots, green chillies and lime juice and mix well
  • Make balls from the dough, roll out and then cut quarter on one side, roll sidewise and tuck in the tail end like a lachha. Make like a standing peda shape. Complete for the rest
  • Press the peda like shape. Roll out the Paratha
  • Beat the eggs and add salt and set aside
  • In a Tawa first drizzle oil, add the Paratha. On medium flame roast the Paratha, set aside
  • In the same tawa add beaten egg, place the Paratha. Press and flip, the egg side would be done well and the top side would be fried crispy. Set aside. Complete the batches
  • On the egg, add the julienned vegetables and fold from one side, place the parchment paper around it well and tuck the beneath.
