- Preheat the oven to 180C, grease and prepare your baking tin thoroughly.
- Sieve all the dry ingredients in a bowl and keep them aside.
- Mix the oil and brown sugar together in a clean bowl and whisk very well- around 5-6 minutes or until most of the sugar has dissolved.
- Add mashed banana and mix in very well, until fully incorporated. Add your buttermilk slowly and whisk in.
- Add your dry mixture into the wet, folding slowly and ensuring not to overmix.
- Optionally, align your pan with some sliced bananas for a caramelised look on the top.
- Pour your batter into the tin, and bake at 180C for 32-35 minutes.
- Let cool before demoulding. You can serve the bread with some coconut yoghurt optionally.
