  • Whole Wheat Flour
  • Baking Powder
  • Baking Soda
  • Coconut Extract
  • Buttermilk
  • Brown Sugar
  • Neutral Oil

Instructions

  • Preheat the oven to 180C, grease and prepare your baking tin thoroughly.
  • Sieve all the dry ingredients in a bowl and keep them aside.
  • Mix the oil and brown sugar together in a clean bowl and whisk very well- around 5-6 minutes or until most of the sugar has dissolved.
  • Add mashed banana and mix in very well, until fully incorporated. Add your buttermilk slowly and whisk in.
  • Add your dry mixture into the wet, folding slowly and ensuring not to overmix.
  • Optionally, align your pan with some sliced bananas for a caramelised look on the top.
  • Pour your batter into the tin, and bake at 180C for 32-35 minutes.
  • Let cool before demoulding. You can serve the bread with some coconut yoghurt optionally.

Notes/Tips

You can make a coconut or normal icing to top with if you want, which is just 50/50 icing sugar and cream/coconut cream, warmed slightly and drizzled. You can also leave out the coconut extract or replace it with vanilla if you don't have it on hand.
