Ingredients

  • Freshly grated carrots
  • All purpose flour
  • Brown sugar
  • Curd
  • Baking powder
  • Cinnamon powder
  • Ground nutmeg
  • Baking soda
  • Refine oil
  • Vanilla extract
  • For cream cheese Frosting
  • Cream cheese to room temperature
  • Butter in room temperature
  • Icing sugar

Instructions

  • Whisk all dry ingredients in a large bowl and combine very well. In a medium bowl whisk the oil, curd, brown sugar and vanilla extract very well until combined. Pour the wet ingredients into the dry ingredients and gently whisk until mixed well.
  • At this stage if required add milk for making smooth batter. Finally add grated carrots and combine everything very well. Spread the batter into prepared loaf pan.
  • Bake for 30 mints in pre heated oven at 180. Baking times vary so keep check, if required bake for another 5 mints. Cool completely in the pan set on a wire rack.
  • Cream cheese frosting, beat the cream cheese in a medium bowl on medium high speed until smooth and creamy. Beat in the butter until combined. Add powder sugar than beat on low speed until smooth and creamy.
  • Set in freeze for 30 mints. Decorate as per ur choice and serve. Here add food colour in my creame cheese n make small carrots so that children can happily enjoy it.
