- In a sieve, over a bowl, add maida, baking powder, baking soda, salt, cinnamon powder, cocoa powder and coffee powder.
- Sift the dry ingredients well and set the bowl aside.
- In another bowl, add milkmaid (or any other sweetened condensed milk), vanilla essence, olive oil (or flavourless oil) and milk which should be of room temperature.
- Blend the wet ingredients well with a whisk for 1 to 2 minutes.
- Now add grated carrots, chopped dry fruits (walnuts, raisins, almonds, cashews) and mix it well.
- Next add sifted dry ingredients to it and fold it gently. DO NOT OVER FOLD THE BATTER. (You can add a little milk if the consistency is too thick.)
- Pour the cake batter in a greased cake tin and tap so if there are any air bubbles, it will be removed. Cover it with an aluminium foil or a plate so as to prevent water from entering while steaming.
- Put this tin in a steamer with enough water and steam the cake for 40 minutes on medium heat, then on low flame for 20 minutes (or until a wooden skewer comes out clean.)
- Once it's done, take it out and allow it to cool down.
- Finally, remove it from tin and garnish it with chopped dry fruits.
