Eggless Chocolate And Dry Fruit Cake Roll

Ingredients

  • All purpose flour - 1 1/2 cup
  • Powder Suger - 3/4 cup
  • Baking powder - 1 tsp
  • Baking soda - 1 /2 tsp
  • Curd - 1/2 cup
  • Orange juice - 3/4 cup + 1/4 cup water
  • Cocoa powder - 2 tbsp
  • Oil - 1/4 cup
  • Dry fruits - Dates, Almonds, Cashews,
  • Cherries, raisin, tutti-fruity

Instructions

  • Soak 3 tbsp chopped dates, 1/2 cup tutti-fruity, chopped almonds, cashews, walnuts, 3 tbsp cherry in 1/2 orange juice 1/4 cup water.
  • Now sieve 1 cup all purpose flour, baking powder, baking soda, 2 tbsp cocoa powder in a bowl.
  • In another bowl add 1/2 curd, 3/4 powdered sugar and mix it than 1/4 cup add oil. Now add dry mixture to it, add soaked dry fruits mix it well.
  • Grease nonstick pan with oil and dust some flour. Put some batter in the pan and spread. Put the pan on the hot pan cover it and cook it on low flame for 8-10 minutes.
  • After the cake is cooked, take it out on the butter paper, cut the edge, now fold it with butter paper and keep it in the fridge for a 15 minutes.
  • Now take out the cake, apply chocolate ganach on it and fold it to make a roll Now keep it in the fridge for 30 minutes.
  • Then take out from fridge and apply chocolate ganache on it, top it up with chopped dry fruits, tutti - fruity, cut it into pieces and serve it.

Notes/Tips

1. It can be cooked with or without oven 2. You can also use whipped cream instead of chocolate ganache.
