Eggless Sooji vanilla Cake

Ingredients

  • 2 cups sooji (fine)
  • 1/2 cup curd
  • 3/4 cup powder sugar
  • 1/4 cup oil
  • 2 tbsp milk powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla essence
  • 1/3 cup milk (add if more milk needed)
  • 1/2 cup tutti frutti
  • 1 tsp wheat flour
  • 1 tbsp chopped dry fruits

Instructions

  • Grind the suji to fine powder. In a bowl add curd, powder sugar, milk powder and oil. Mix well. Now add the grinded suji. Mix well.
  • Cover and keep it aside for 15 mins. Now open the lid, add baking powder and baking soda and milk. Mix again. Add more if reqd.
  • Now in tutti frutti add flour and mix. Add it to the suji batter.
  • Preheat a big pan, place a stand. Grease a cake tin with oil, sprinkle some flour and then pour the batter into the tin. Bake it for 40 mins on medium low flame.
  • When ready remove from the pan and allow it to cool completely. Remove and cut it, its ready.
