Falafel and Salad Bun

  • Chickpeas
  • Onion
  • Garlic
  • Cumin
  • Coriander
  • Parsley leaves
  • Wheat flour
  • Sea salt
  • Black pepper
  • Whole wheat bun
  • Tomatoes
  • Carrot
  • Beetroot
  • Lettuce leaves
  • Yogurt

Instructions

  • To make the falafel, place the chickpeas, onion, garlic, cumin, coriander, parsley, flour, salt, pepper into a food processor and blend until almost smooth. Shape the mixture into a patty. Place on a plate, cover with plastic film and refrigerate for 30min
  • Heat a non-stick fry pan over medium heat and spray lightly with oil spray. Add the falafel and cook for 4-5 minutes on each side until cooked through.
  • To serve, cut the bun into half like a burger. On one half of the bun, layer the falafel patty, tomato, carrot, beetroot, lettuce and yogurt. Top with the other half of the bun.
