Gajar Halwa with Coconut Barfi & Walnut Toffee

Ingredients

  • Carrots, milk, ghee, sugar, mawa
  • Dessicated coconut, milkmaid, almonds, Walnut

Instructions

  • Take 1 kg of carrots and cut it longitudinally into strips. Put 1 tsp ghee in a pressure cooker.  Put carrots in it with 1 cup of milk. Take 3 whistles and switch the burner off. Wait till the pressure releases on its own. Then mash the carrots with a masher. Put 2 cups of milk and cook it. Then add sugar according to taste. Lastly add 1 cup of mawa. Mix everything well till the milk dries up. Put 1 tsp ghee on top. Carrot halwa is ready.
  • Coconut barfi- Take 1 cup dessicated coconut. Slightly dry roast it on a frying pan. Add milkmaid to it. Spread it on a plate greased with ghee. Cut it in pieces of your choice.
  • Toffee- Melt 1tsp sugar on a frying pan. Add broken walnuts, almonds, and dry roasted sesame seeds to it. Remove it on a silver foil. Crush it in small pieces.
  • Assemble all 3 dishes together First the carrot halwa layered with coconut barfi, then top it with Walnut Toffee

Notes/Tips

Make sure to open the pressure cooker when it's pressure has released, otherwise carrot might be uncooked We are cutting the carrots into pieces instead of grating them which is a tedious process Roasting the coconut helps in increasing its shelf life
