- Grate 1 kg Red Carrots. Heat 1/4th cup Ghee in a vessel and add 10 to 12 almonds and cashews. Lightly fry and remove them in a bowl separately. In the same ghee now add 1 tsp of freshly pound cardamom powder. Then add the grated Carrots and fry on medium flame till it releases water it would take about 10 to 15 mins. Now add 1/2 cup sugar you can increase or decrease the sugar content as per your sweet requirement. After sugar melts add 1/2 cup of fresh cream and stir well. Fry this for about 10 mins until the cream has well dissolved in the halwa. Lastly add the fried cashews and almonds to it. Yummy Gajar Halwa is ready
