- First rinse and peel carrots.
- Next grate the carrots with a grater.
- In heavy kadai switch on the gas ,add 2tbsp ghee and all the grated carrots and add full fat milk.
- Mix the grated carrots and milk together.
- Cook the mixture on low medium heat. after few minutes the milk will began to froth and then start slowly reducing.
- Cook the carrots and milk mixture.
- Add 4 tbsp ghee and next add sugar to taste.
- Add cardamom powder and continue to simmer on low flame.
- When halw has reduced to a pudding like consistency add dry fruits of your choice.
- Serve Gajar ka Halwa warm from the pan and garnish with some chopped dry fruits.
