Ingredients

  • 3 1/2 cups All Purpose Flour or Maida
  • 2 tsp heaped Dry Yeast
  • 1/2 tsp Salt
  • 2 tbsp Olive Oil
  • 2 tsp Sugar
  • 1 1/4 cups lukewarm Milk
  • 14 Garlic Cloves minced
  • 5-6 tbsp Butter
  • 2 tsp Dry Parsley flakes
  • 1 small bunch chopped Coriander Leaves
  • 2-3 cups Mozzarella Cheese
  • 2 tbsp Red Chilli flakes (optional)

Instructions

  • For the dough, you need to first soak the Yeast in warm Milk along with Sugar and let it activate. Add this frothy mix to the Flour and Salt. Throw in some Olive Oil and make a smooth dough out of it.
  • Heat Butter on a low along with chopped Garlic and Coriander Leaves just for a minute. Take it off the heat. Stir in some Dry Parsley flakes and Oregano. Mix well. Now add half of this prepared Garlic Butter mix to the dough and knead it thoroughly.
  • Cover it and let it rest for almost 2 hours in a warm place in your kitchen. If it's cold in your place, plug in your oven and preheat for almost 5 minutes and switch it off, then keep this in the oven. (see recipe)
  • Now after the stipulated time, take it out onto the working surface. Punch it down to release the air bubbles. Divide the dough into equal roundels. Stuff them all with Cheese and make medium sized balls out of all the roundels.
  • Brush on top with the remaining Garlic Butter mix. Keep them covered and neatly arranged in a Butter paper lined baking tray for a second proofing for about 25-30 minutes in all. Just prior to nearing the time, say about 10 minutes before or so, preheat your oven on 200°.
  • Bake these for about 20-25 minutes. That's it. All done and set for a party. Enjoy these right from the oven with a warm bowl of your family's favourite Soup or on their own as well. They taste absolutely delicious. Enjoy! Yum!
