Ghevar is an Indian sweet recipe. It is mostly made in Rajasthan in the month of Shravan, on the day of Rakshabandhan & Krishnashtami. His Shravan month is incomplete without Ghevar. This ghevar with sugar syrup tastes very good.

Ingredients

  • Measurement : 1 cup : 240 ml
  • 1 cup all purpose flour
  • 1/4 cup ghee
  • 1/4 cup cold milk
  • Cold water as needed
  • Half a lemon juice
  • 5-6 ice cubes
  • For sugar syrup:
  • 1 cup sugar
  • 1/2 cup water
  • Orange food colour or saffron
  • Cardamom powder (optional)
  • Dry fruits for decoration
  • Oil for frying

Instructions

  • Take ghee in a pot, add ice cubes and rub for 5-7 minutes till it becomes creamy by hand.
  • Once the mixture is well creamy, remove the ice cubes. Then add some cold milk, some all purpose flour and keep whipping by hand. When the milk is finished, add cold water and remaining flour and whisk. When the mixture is ready, add lemon juice and beat again. The mixture should be as thin as shown below.
  • Take a deep pot to heat the oil. When the oil is heated, drop the mixture with a spoon so that it looks like a net.
  • Leave 5-6 laddle of the mixture in the middle of the mixture.
  • Fry on a slightly reddish color with the tip of a knife in the middle, so that the excess oil drains out. Drain on a sieve.
  • On the other hand, make the sugar syrup, add sugar and water on gas and cook one string consistency (add saffron or orange food color if desired). Take the ghever in a plate and add the sugar syrup on it. Top with chopped dryfruits. Ready to serve Ghever.

Notes/Tips

When making ghevar, you have to make it very carefully. Then you fry it in ghee or in oil. Now you can add royalty by putting basundi on the ghevar.
