Golden Milk Chia Pudding

Ingredients

  • canned low fat coconut milk
  • unsweetened regular milk or Almond milk
  • chia seeds
  • honey
  • turmeric powder
  • cinnamon powder
  • ginger powder
  • ground Cardamom
  • ground black pepper
  • unsweetened coconut chips or shredded coconut for
  • fruit of your choice for toppings

Instructions

  • Over medium heat, in a medium saucepan combine the coconut milk, regular milk, turmeric powder, cinnamon powder, ginger powder, ground cardamom and black pepper.
  • Bring to a simmer, whisking until the spices are well incorporated and the milk has vibrant golden hue, will take 2 minutes. Be careful that the milk doesn't boil over!
  • Transfer the golden milk to a mixing bowl and let it cool down until room temperature.
  • Add chia seeds and honey to the golden milk, stir well and cover with lid or cling film.
  • Place in the fridge, and let sit for at least 2 hours, or overnight. Once ready, the mixture should be thick with the consistency of pudding.
  • Give the pudding a good stir to make sure there are no clumps.
  • Divide the mixture into four small glasses or bowls.
  • Top with unsweetened coconut chips and fruits of your choice. And ENJOY!

Notes/Tips

If you don’t want to add honey then substitute it with maple syrup or any sweetener of your choice or you can you skip the sweetener completely. You can substitute coconut milk with any other nut milk of your choice. (Almond milk would be a great option).
