Grilled Paneer Beetroot Rice

  • beetroot
  • Onion sliced
  • Crushed Garlic Ginger
  • Tomato sliced
  • Curry Leaves
  • Lemon juice
  • Mustard seeds
  • Paneer
  • Buttermilk
  • Besan
  • Turmeric
  • Roasted Cashews
  • Salt

Instructions

  • i. Cooking the rice: Put oil in the pan, heat it, put mustard seeds, then add garlic and ginger after that goes in sliced onions, curry leaves. Saute.
  • Now add chopped beetroot, add salt to taste, and then goes in the pre boiled rice and roasted cashews. Sprinkle one tablespoon of lemon juice. Mix all the ingredients very gently, don't cook much. Take off from heat and put aside.
  • ii. Preparing the turmeric sauce: For preparing traditional turmeric sauce, slice garlic, ginger, onion, very finely, chop tomatoes. Heat some oil in the pan, add mustard seeds, sliced garlic ginger and tomatoes.
  • Add salt and then goes turmeric and curry leaves. Cook it to a fine paste, add buttermilk mixed with besan, stir, cook till the sauce thickens. Now keep it aside.
  • iii. Paneer Grilling Marination: Take oil in a bowl, squeeze lemon juice in it, add turmeric, red chilli powder and salt.
  • Mix very nicely and rub this paste on sliced paneer, keep for 5-7 minutes.
  • Grilling: Heat oil in a grilling pan, place sliced paneer in the pan. Brown from both the sides and take it out.
  • Plating & Presentation: Rice goes in the centre topped by grilled paneer and surrounded by aromatic turmeric sauce.

Very nutritious, delicious dish is ready to serve.
