  • 1 cup spinach
  • 0.5 cup methi bhaji
  • 0.25 cup suva bhaji
  • 0.5 cup muli bhaji
  • 1 cup green tuvar dana
  • 1 cup green peas
  • 1cup flat beans
  • 1 cup snake beans
  • 0.5 cup chopped carrot
  • 0.5 cup chopped raddish
  • 0.5 cup chopped french beans
  • 1 cup red jalapeno chillies
  • 1 cup chopped cauliflower
  • 1 cup chopped bottle guard
  • 0.25 cup chopped brinjal
  • 0.5 cup chopped sweet potato
  • 1cup chopped potato, tomatoes and green onion and
  • 0.5 cup green chillies and 2 cup coriander
  • 0.5 cup green turmeric
  • 0.5 cup mung daal
  • 0.5 cup toor daal
  • 0.25 cup chana daal
  • 10-12 cloves
  • 1 tbsp cumin and ajvaain
  • 2 tbsp oil
  • Salt to taste and 2 lemons

Instructions

  • 1. Soak (8hours) and boil all the daals in a pressure cooker.
  • 2. Put a thick bottom pan on stove and add 1 litre of water ( depending on the thickness you want).
  • 3. Add peas and hard beans in the water and start adding other vegetables ( hard ones forst and soft ones latter).
  • 4. Add ajwain and cook these vegetable broth for atleast 50 minutes on a low flame (use charcoal chulah for best results).
  • 5. Add tomatoes and coriander in the last and cook again for 5-7 minutes.
  • 6. Blend all the content with a hand blender to make a smooth liquid. Add water if needed.
  • 7. Add salt and prepare a tadka on the stove. For tadka: crackle cumin, asafoetida and garlic with some garam masala in oil.
  • 8. Add tadka on this boiling liquid.
  • 9. Adjust salt turn of the heat and add lemon juice.
  • 10. Serve this amazingly healthy Ghuto with bajra roti, roasted green chillies, sliced onion and smoked chhass.
