- 1. Soak (8hours) and boil all the daals in a pressure cooker.
- 2. Put a thick bottom pan on stove and add 1 litre of water ( depending on the thickness you want).
- 3. Add peas and hard beans in the water and start adding other vegetables ( hard ones forst and soft ones latter).
- 4. Add ajwain and cook these vegetable broth for atleast 50 minutes on a low flame (use charcoal chulah for best results).
- 5. Add tomatoes and coriander in the last and cook again for 5-7 minutes.
- 6. Blend all the content with a hand blender to make a smooth liquid. Add water if needed.
- 7. Add salt and prepare a tadka on the stove. For tadka: crackle cumin, asafoetida and garlic with some garam masala in oil.
- 8. Add tadka on this boiling liquid.
- 9. Adjust salt turn of the heat and add lemon juice.
- 10. Serve this amazingly healthy Ghuto with bajra roti, roasted green chillies, sliced onion and smoked chhass.
