  • Milk powder
  • Maida
  • Baking Soda
  • Yoghurt
  • Ghee
  • Oil /Ghee for deep frying
  • Saffrons or nuts for garnishing
  • For Sugar Syrup
  • Sugar
  • Water
  • Cardamom
  • Few strands of saffron or lemon rinds

Instructions

  • Sift milk powder, maida baking soda and salt. This step is optional, but it helps in even mixing. Add the ingredients to a large mixing bowl. Add curd and few drops of ghee and mix everything well.
  • Knead the dough very gently to form a smooth dough. Dont overknead. If the dough is too sticky, then add 2 tsp of maida. Cover it and keep by side for 5-10 minutes.
  • Now prepare the sugar syrup.Add sugar and water in a large vessel. Boil it for about 10 minutes on medium flame till sugar dissolves completely. and becomes slightly thick. No need of one string consistency.Switch off the flame. Now add crushed cardamom,
  • Make the balls without any cracks, in case cracks form can knead dough again by adding a teaspoon of milk. Heat oil in a pan and when the oil is hot enough drop few balls carefully. Cook in medium flame or else it wont get cooked inside.
  • Add the Gulab jamuns to warm sugar syrup.Make sure sugar syrup is warm and not too hot. Keep aside for 1-2 hours for the jamuns to soak well in syrup. The more it sits, the more soft and sugary it becomes inside. Serve along with vanilla ice cream or can h
