- Heat a heavy bottom pan on medium heat. Then add 1 teaspoon of ghee to it and then add cardomom and cinnamon stick , sauté it for a while
- Now add 1/4cup of sooji and roast it well in ghee until it turns brown
- Once sooji turns golden brown add 1cup of Milk and allow it to cook completely
- Once sooji cooked well Add 2 tbsp of soaked sago to this mixture and allow to cook in milk Adjust the consistency while adding extra milk
- Now add 2tbsp of grated carrot to the mixture, mix well and allow it cook well Also u can use grated bottle gourd (Khandu) instead of carrot It’s ur choice
- Once evrything cooks well add 2/3 cup of condensed milk to the mixture and mix well until it combines well
- At last add saffron milk( saffron 4/5 strands soaked in 1/2 cup of hot milk) mix well
- Finally once the kheer is ready add chopped dryfruits of your choice I chooses cranberries , black raisins, pistachios, almonds and pumpkin seeds Garnish with rose petals U can enjoy hot hot healthy kheer with healthy nuts
