- ▶️ Remove the Charred skin of roasted eggplant ▶️Cut into pieces after removing as many seeds as possible to avoid bitterness.
- ▶️Blend into a smooth paste in mixer with garlic,sesame seeds, salt&pepper,1tbsp of olive oil and 1tbsp lemon juice.
- ▶️Mix in some fresh torn basil leaves ▶️Drizzle 1tbsp olive oil and Sumac powder(optional) before serving
- ▶️Cut Cucumber and Carrots into thin Strips ▶️Serve fresh.
- Note: ▶️ If not using immediately,then store in the refrigerator in a jar covered with a thin film of olive oil ▶️Use fleshy big variety of brinjal for better texture
