Hong-Kong style Mango Creme Crepes

Ingredients

  • All purpose flour
  • Custard powder
  • Milk
  • Sugar
  • Mango
  • Whipped Cream
  • Butter

Instructions

  • Mix together milk, flour, custard powder and sugar. Strain the mixture to avoid lumps. In a non-stick pan, on low-heat, pour 1/4 cup of batter at a time and cook until bubbles appear. Spread the crepes to paper-thin thickness.
  • No need to cook from both sides. Now let the crepes cool, and whip the cream until stiff peaks form
  • Assembling: Lay the pancake on a flat surface, spoon whipped cream on it, place a small chunk of mango on top of whipped cream and again some whipped cream on top of mango
  • Wrap the filling from four sides of the pancake to form a pillow-like shape. Place it on a serving plate with the folded side facing down. Cut in the middle and you will the exact shown image.

Notes/Tips

Use Dlecta whipping cream, it’s stable and gives firm peaks and include sugar. Use only a non stick pan and spread the batter super thin for pillow soft texture.
