- Soak dates and de seeded tamarind pulp in water for at least 2 hours. After 2 hours, transfer the dates, tamarind with the same soaked water to a saucepan. Boil the mixture on medium heat for 10-15 minutes. As dates and tamarind starts boiling and water evaporating, the mixture will start thickening. Switch off flame and let it cool.
- Transfer mixture to a blender , add black salt and cumin seed powder and blend to a fine paste. Strain to discard any impurities or grits. Store in airtight glass container and later refrigerate.It stays fresh for upto 20 days.
- When ready to make the drink, fill the serving glass with cold water and few ice cubes. Add in 2 tsp of cordial or more to taste and give it a quick stir. Sprinkle some chat masala or roasted cumin powder.pour in glass and serve.
