- In a large bowl take 1½ cup besan, 2 tbsp rava, ½ tsp ginger paste and 1 chilli. also add ½ tsp turmeric, 1 tsp sugar, pinch hing and ¼ cup curd. now add 2 tbsp oil, ½ tsp salt and 1 cup water. whisk and mix well making sure everything is well combined. now add ½ tsp eno fruit salt and mix gently. mix until the mixture turns frothy. now immediately pour the batter into greased idli plate. place the idli plate in steamer and steam for 12 minutes. now prepare the tempering, heat 2 tbsp oil. add 1 tsp mustard, ½ tsp cumin, 1 tbsp sesame, pinch hing, 3 chilli and few curry leaves. stir and splutter the tempering. now pour ¼ cup water, 1 tbsp sugar, ¼ tsp salt and 1 tsp lemon juice. mix and boil making sure everything is well combined. pour the tempering over the idli, make sure the water is absorbed by idli. garnish with 2 tbsp coconut and 2 tbsp coriander. Serve hot.
