Ivy Gourd Curry

Ingredients

  • Ivy gourd (thinly sliced) 1 big cup
  • tomato (finely chopped) 1 small cup
  • onion ( finely chopped) 1 small cup
  • few curry leaves, coriander leaves
  • ingredients for grinding : Red chillies 4
  • dry copra ( few PIECES)
  • fried ground nuts 1/4 cup
  • little tamarind, sugar, salt to taste

Instructions

  • cook ivy gourd pieces till soft.
  • heat oil ( 2tsp) in a thick bottomed kadai. make seasoning with mustard, curry leaves.
  • add onions, tomatoes and saute in the same kadai.
  • mix in masala powder which was ground and salt. add ivy gourd pieces and thoroughly mixed so the masala is absorbed well.
  • garnish with coriander leaves.

Notes/Tips

adjust chillies according to spiciness desired.
