Jaggered Pancakes

Ingredients

  • Wheat Flour - 100gm
  • Jaggery - 80gm
  • Baking Powder - 1 tsp
  • Baking soda - a pinch or 2
  • Fresh Egg - 1 large
  • Milk - 2 tbsp (if needed)
  • White Oil / Ghee - 2 tbsp

Instructions

  • In a mixing bowl, add the flour and oil/ghee. Mix thoroughly
  • Add the egg and mix with the flour. Stir until a smooth batter is formed. You can add warm milk to smoothen the batter.
  • Once the batter is ready, add the jaggery and mix thoroughly.
  • Add baking powder and mix .
  • Add baking soda and give it a light 1 or 2 stir.
  • Switch on your gas stove and place a frying pan. Let it get hot. Once hot, reduce the flame
  • Pour one laddle of the batter on the frying pan. DO NOT SPREAD. Pancake batter will spread on its own.
  • You will see some bubbles will start forming on the pancakes. Now flip the pancake and let it cook from the other side. Once cooked remove from flame
  • Repeat with rest of the batter. Serve with fresh jaggery syrup

Notes/Tips

1. Frying Pan made of Iron works best. 2. Do not apply any oil to the frying pan. It will get sticky. Simply pour the batter to the hot frying pan.
