- Grate the carrots.
- To a wok, add ghee and roast the carrots until it is cooked.
- Once the carrots are cooked, add the jaggery. Prepare this mixture. Here you can also add khoya, grated coconut or dry fruits.
- Once the mix is ready, remove from flame and keep it aside.
- In a large bowl, take the flour and knead a smooth dough. Keep it covered with moist cloth for 15 mins
- After 15 mins, roll out thin sheets for preparing the momo. Place the Carrot Jaggery mix at the centre and fold the sheet as per your choice. Make rest of the momos in the same way.
- Place a pot with water on the stove. Place a wire mesh and large cabbage leaves on the mesh. Place the momos on the cabbage leaves. Cover the pot. Let it steam for 15 mins.
- Serve hot with fresh jaggery syrup
