This is an amazingly healthy cookie with the goodness of jaggery, oats , almonds and white butter. Its chewey and delicately flavoured with cinnamon, cardamom and vanilla. The cookies are great as they have wholewheat flour and no white sugar. Jaggery is the star of the recipe and the only sweetener used.

  • Recipe 1 Jaggery Oat and almond meal cookie Ingredients Wholewheat Flour 75 gm Rolled Oats Flour 50 gm Almond Meal 50 gm Baking Powder 1/2 Teaspoon Cardamom 1/2 Teaspoon Cinnamon 1 Teaspoon Salt Pinch White Butter 40 gm (melted) Jaggery Powder 100 gm Vanilla Essence 1 teaspoon Milk to bind the dough Almond  30 gm chopped Method Grind the oats and the almond together in a grinder. Take it out in a nice dry bowl add the wholewheat flour, baking powder, cardamom, Cinnamon and salt. Give it a good mix. Now melt the butter add the jaggery powder give it a good stir add the dry ingredients and the vanilla essence.  Add just enough milk to make the dough. The dough will be a little sticky. Make 8 big cookies out of this dough. Bake at preheated oven 175°C for 15 minutes or untill the edges become light brown. Remove from oven and let them cool down a bit. Shift to a wire rack . Enjoy ! once cooled.
