A very easy and quick Jain Poha recipe without onion and potatoes which can be prepared under 10 minutes. A light spicy and tasty vegan recipe which is so filling that can be enjoyed any meal of the day.

  • 2 cups poha (flatten rice)
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp asafoetida (hing)
  • 1 tsp fennel seeds powder
  • 1 tsp turmeric powder
  • 1 tbsp sugar
  • 2 tbsp lemon juice
  • to taste Rock Salt
  • 3 green chillies finely chopped
  • Handful curry leaves
  • 2 tbsp grated coconut
  • 1 tbsp peanut oil

Instructions

  • Clean and sieve the flatten rice(poha). Wash and soak them in water for 2-3 minutes. Drain and put in a colander for 15 minutes.
  • On a low flame, heat oil in a heavy bottomed pan. Add the mustard seeds and cumin seeds. As they crackle, add asafoetida and turmeric powder. Add green chillies and curry leaves. Sauté.
  • Immediately add the flattened rice, fennel seeds powder, sugar, salt and lemon juice.
  • Gently mix well. Garnish with fresh coriander, grated fresh coconut and serve hot.
