Jalebi

Ingredients

  • For Sugar Syrup: 2 bowl sugar
  • 1 bowl water
  • 2 elaichi
  • 1/2 teaspoon orange colour
  • as required Few saffron strings
  • as required Lemon juice
  • For Jalebi: 1 bowl maida
  • 1 tablespoon ghee
  • 1 packet eno
  • 1 bowl water
  • as required Oil for frying

Instructions

  • Take a pan (not much deep) add sugar and water. Keep stirring on low flame so than sugar dissolves. Add elaichi, food colour and saffron. Cook until sugar dissolves and you get one string consistency. Turn off the flame and add 2-3 drops of lemon juice.
  • Now take a bowl add maida eno and ghee and mix it with your hands. Add little more water and again mix it with hands. Add water in batches and mix it with hands only and make lumps free batter (flowing consistency).
  • Take a plastic bag (milk packet or chips packet) or you can use ketchup bottle and pour the batter in it and make a small cut at the corner (mehendi cone like). Heat oil in kadhai and keep it on high flame and start making jalebi and slow down the gas flame and fry till brown and crisp.
  • When jalebi done put them directly in to sugar syrup from kadhai and gently press them so that they completely dip in sugar syrup.
  • Take the jalebis out (don't put them in sugar syrup for long, they will become soft)
  • Now jalebis are ready to eat.

Notes/Tips

Can eat it with milk or rabdi as well
