Maharashtrian people jalebi is specially made for any festival and especially as a wedding sweet.

Ingredients

  • 50 gms all puropse flour (1/2 cup)
  • 1 tbsp curd
  • Orange food colour in a pinch
  • 150 gram sugar (3/4 cup)
  • 100 ml water
  • 1/2 tsp lemon juice
  • Oil for frying
  • 2 tbsp pistachios for garnish

Instructions

  • In a bowl, add all puropse flour, curd, water, whisk and cover overnight. (8 hours)
  • In the morning, if the flour is fermented, add orange color and whisk again.
  • In another pot, add sugar, water, orange color, lime juice and bring to a boil. Turn off the heat and cover.
  • Take a plastic bag in a glass and pour the fermented mixture into it. Wrap the rubber around the top.
  • Heat oil on a pan. Now add a little mixture to see if the oil is hot or not. Now cut corner of plastic bag,
  • Pour the jalebi mixture in jalebi shape in hot oil and fry on both sides.
  • Once the jalebis are ready, place them in warm sugar syrup.
  • Garnish with pistachio slices. Ready to eat jalebi .

Notes/Tips

You can also use yellow colour in this jalebi.
