very nutritious recipe which is quite common in Maharashtrian households -it is called Ukad. Traditionally , it is made with rice flour and buttermilk. But i have used Jowar flour( also known as Sorghum or White Millet) to make it more nutritious and light. This yummy recipe loaded with the goodness of protein, fibre and vitamin A.

Ingredients

  • 1 cup Jowar flour
  • 1/2 cup Curd
  • 2-3 cups Water
  • 2-3 Green Chillies-finely chopped
  • 2-3 Garlic Clove
  • Salt to taste
  • For tampering: 1 spoon oil
  • 1 tsp Mustard Seeds
  • 2-3 Curry Leaves
  • a pinch ofAsafoetida
  • ¼ tsp turmeric powder
  • Chopped Coriander for garnishing

Instructions

  • Beat the curds and add enough water to make buttermilk.
  • Add jowar flour and salt and mix well removing all the lumps. Keep this mixture aside for 5 mins.
  • Heat oil in a thick bottom pan. Add asafoetida & mustard seeds- let them splutter.
  • Add green chilies , chopped garlic cloves and curry leaves. Add turmeric powder. Now add the jowar- buttermilk mixture and stir continuously to avoid lumps.
  • The mixture will start getting thicker. You can add more water to get desired consistency.
  • Cover it for 5 mins and your dish is ready to be savored. Garnish it with chopped coriander and serve it hot.
