- First take 1/2 kg of ash gourd and take hard part of edge and remove outer layer and soft part of centre
- Poke the piece with a fork
- Now take around 2-3 cups of water in a big bowl and add limestone (chuna) to the water. Soak all the peices in the water for overnight or 12 hrs
- After 12 hrs take peice and wash it completely to remove trace of limestone.
- Now take water in a vessel and boil the peice for 20 mins at a medium high flame. Insert a toothpick and if it goes inside with less force then petha is cooked.
- Now for preparing the sugar syrup take 1 cup of water and to that add 1/2 cup of water. Also add 1/2 tsp elaichi powder, 10 strand of kesar and some yellow food color. Cook the sugar syrup until sugar dissolve completely and it starts to thicken
- Now add off the peice of petha to the sugar syrup and cook it for 10-15 mins until sugar syrup very thick.
- Remove the peices of petha from sugar syrup and let it dry for 4-5 hours.
- Petha is ready.....
