Ingredients

  • 1 cup long basmati rice pre soaked for two hours
  • 1/2 cup mix dry fruits (cashew, almond, pista)
  • 2 tbsp ghee (clarified butter)
  • 3/4 cup sugar
  • strands Few saffron
  • 2 small cardamom (powdered)
  • 1 big cardamom
  • 2-3 cloves
  • 1 small cinnamon stick
  • Water as needed to boil the rice

Instructions

  • Take a heavy bottom pan and add 1 tbsp ghee to it. Fry the dry fruit separately at low flame as to light golden in colour. Make sure they don’t get burnt.
  • In the same pan, add cloves, cinnamon stick, black cardamom, few kesar strands and add rice and water. Let the rice cook for 15-20 min. They should be 3/4th cooked.
  • Strain the rice and keep aside. In the same heavy bottom pan add the left ghee and add sugar along with 2-4 tbsp of water. Let the sugar dissolve and then add the semi cooked rice to it. Give this mix a gentle stir and cover the pan with lid. (This all at low flame)
  • Let the rice cook completely but make sure they don’t get mushy. Add half of the fried dry fruits, add green cardamom powder and mix gently.
  • Garnish with left over fried dry fruits and few kesar strands and Serve hot.
