  • 3 cups pitted Dates
  • 1 cup Golden Raisins
  • 1/4 cup seedless Tamarind
  • 1 tsp Cumin powder roasted
  • 1/2 tsp Salt
  • 3 tbsp Red Chilli powder
  • 3 tbsp Sugar
  • 2 cups water
  • 1/2 tsp Dry Ginger powder or Saunth

Instructions

  • Add Tamarind, Raisins and Dates to a pan along with water. Also add the rest of the ingredients except sugar. Simmer on a medium high heat. After the mix softens in about 10 minutes, add Sugar and mix well. Let it cool down a bit. Sugar is optional here. You can skip it too if desired. Otherwise add according to your own preferences.
  • Because Raisins are added in this. Therefore use Sugar as required. Blend into a smooth semi solid paste and store in an airtight container. Use it according to taste and preference. Make it thin by adding little water whenever you need a thinner consistency Chutney.

It's best if it's kept in the freezer if you have made it in larger quantities. However it stays good for upto 4-5 Months in the refrigerator. If desired, keep a major part of it in the freezer in such cases. Simply thaw before using. And always use glass bottles or canisters for storing it. Enjoy!
