  • Refined flour
  • Onion
  • Capcicum/bell pepper
  • Large egg
  • Oil
  • Maggi masala
  • Maggi ketchup pichkoo
  • Salt
  • Green chilli
  • Coriander leaves
  • Mayonnaise
  • Green chutney

Instructions

  • 1) take refined flour into a mixing bowl, add a pinch of salt, 10gm of refined oil or any vegitable oil, mix it well. 2) make a soft dough and cover it with a damp cloth, leave it aside for atleast 10-15 mins.
  • 1)prepare the egg roll stuffing by slicing onion, capcicum julienne. 2) into a pan add 1 tbsp of oil, put onion and capcicum into the pan, let them cook well for around 3-5 mins on medium slow flame, add salt+coriander pownder+red chilli powder
  • 1 packet ofMaggi masala + half of maggi pichkoo+half of green chutney and cook well and make a dry onion masala.
  • Now coming to the egg part, crack all the eggs into a large bowl, add fine chopped onions, ginger garlic paste 2 tsp, green chilli and coriander leaves are optional as per your taste.
  • After completing all the mise en place, lets make our 1)Kolkata Style egg rolls. Divide dough into 8 equal parts and make roundles of them. I would suggest to make laccha paratha, but for a simpler method I'm using the recipe of normal square paratha.
  • You can also make round paratha or whichever shape you like the most. So half cook all the parathas on one side and keep then aside to cool down. 2) now pour the egg batter into the pan, let it cook to half and put a paratha onto it.
  • After putting the paratha, let the omlette cook completely and then flip the paratha. Well its the turn of our onion masala to do its magic, put 1 tbsp of onion masala or that much quantity that it would be enough for rest of the parathas.
  • After cooking the paratha on the other side, remove it from the pan and put mayonnaise, green chutney and maggi pichkoo, roll it tight into a white paper. And voila enjoy your hot Kolkata style egg roll. Bon appétit.

Notes/Tips

1)After making the dough, make sure to rest it for atleast 10-15 mins or max 30 mins. 2) As it has my own twist of using maggi masala, it might taste a little different than original Kolkata Style egg roll but I'm guranteed sure that the taste of my egg roll recipe will stick to your taste buds and you will love it so much. 3) as the recipe has a lot of fat items included, like eggs, mayonnaise, oil and maida/refined flour so you can use other ingredients instead of that.
