- 1) Kunda Kheer: Soak 1/2 cup rice for 1 hour. Then grind it along with 4 mawa toasts. Boil 1/2 litre milk, and add this ground paste of toast and rice to milk. Add sugar according to your taste as toast is already sweet. Stir it for a few minutes then add 1/4 cup mawa/khoya. Kunda kheer is ready. You can serve it hot or cold. I have decorated it with sweet boondis, dried rose petals and dry fruits in the center.
- Sweet boondi- Take 1/2 cup besan in a bowl. Add a pinch of baking soda. Make a lump free batter. Take a slotted spoon. Pour the batter in hot oil through it. Deep fry these boondis. Remove it. Make 3 parts of the boondi. Put green and red color in 2 parts respectively, and leave one as it is. Soak these boondis in sugar syrup for an hour. To prepare sugar syrup- 1 cup sugar + 1 cup water, 2 cardamom pods, boil it till the mixture is slightly sticky to feel on fingers. It's ready to serve
- Remove the kheer in bowl and decorate it with boondis, dry fruits and dry rose petals!
