Layered Namakpaara And Nimki

Ingredients

  • 2 1/2 Cup All Purpose Flour
  • 1 tsp salt or to taste
  • 1/2 tsp carom seeds(you can even add Nigella seeds
  • 1/4 cup oil for dough
  • As Required Oil for frying
  • 2 tbsp oil for brushing
  • 1 little flour for dusting around 2 tbsp
  • 1/4 Cup water to knead the dough or as needed

Instructions

  • Seive the flour add salt to it. Crush the carom seed on your palms then add to the flour mix and add oil. Rub it very well until all the flour mix with oil. Now add little water at a time and knead a soft smooth dough. Just like the puri dough.
  • Now cover it and allow it to rest for 20-25 minutes. Then make four equal size balls of the dough. Take out one and cover the rest of the balls. Roll out a thin disc of it a very thin disc that you can see your fingers through it. Don't sprinkle too much flour while rolling out otherwise it will become hard when frying. Now apply 1/2 tsp of oil all over the rolled disc and sprinkle a very little amount of flour over it and spread it all over.
  • Now fold it to half the disc from length side and fold the other side upon the first one. Then again apply some oil and dust some flour and from the breadth, side fold it till half and then on top of it from the other side and make a square just as we make a square paratha. Now this time roll it in the square but not that thin. Again apply some oil and dust some flour roll it till half from lengthwise and then from breadth side and make a square again.
  • Now third time roll it in a rectangular shape and cut it longitudinally with a knife or a pizza cutter or zig-zag cutter. Heat oil in a wok and add these stripes to it. Don't overlap-add only that much which you can fry easily flipping over to sides. Fry it on medium-low heat flipping it over from both sides until completely done with a golden brown colour. One batch will take 7-8 minutes to fry completely. Take it out and allow it to cool down completely.
  • With the same dough, you can make plain nimki or namakpara also. Once cool down store in an air tight container and it will be good at room temperature for around 15-20 days or a month also. Try out these easy and all-time favourite snacks and do like and share with your loved ones.
