Leftover Paratha & Sabji Spring Rolls

  • For the Paratha SpringRolls
  • 4 Leftover Parathas of the previous night
  • For the Filling
  • 1-1.5 Cups Leftover Sabji- Any (I had Potato-Pumpk
  • 3 Eggs: To scramble along with the Leftover Sabji
  • 1/2 Cup Fresh Coriander Leaves: Finely Chopped
  • To Taste Salt
  • 1/2 Cup Onions: Finely Chopped
  • 2-3 Green Chillies: Finely Chopped
  • 1-2 tbsps Chilli-Tomato Ketchup
  • 1/2-1 Cup Shredded Cheese: Any (I’ve not used it t
  • as required Cooking Oil: To Shallow Fry the Parath

Instructions

  • Firstly: Heat up a frying pan over the medium flame & slightly warm up the leftover Parathas- Set Aside, once that’s done
  • In another pan or using the same: Add in some oil/ghee to it & then, in goes the chopped onions & green chillies & sauté- Then break open the eggs- One by one & scramble it nicely- Once done: Add in the leftover Sabji to it now & continue sautéing until it’s all nicely combined and well blended together- Put off the flame now
  • On the clean kitchen platform or any similar smooth & even surface- Place the warm parathas one at a time & apply on its top with some chilli-tomato ketchup & next fill in it with our prepared leftover Sabji-Eggs fillings & roll it perfectly as much as is possible without tearing it much & shallow fry
  • Heating up a concave tawa or a frying pan over the medium flame: Add in some more oil to it & shallow fry the Rolls, nicely until golden browned from both the sides- We need to flip it over once its one side is done to avoid repeated flipping & hence more chances of breaking it in the process- To be flipped over just once correctly
  • Once that’s done transfer it all to the serving plate/platters- Garnish it your own way- Relish this DELISH with your favourite dips/sauces/achars as in the aptly suited condiment to it
