  • 1 cup All Purpose Flour or Maida
  • 1 tsp Vanilla essence
  • 3 Eggs
  • 1 tsp Baking powder
  • 1/2 cup Sugar
  • 1/8 tsp Himalayan Pink Salt
  • 1/4 cup Oil
  • 2 tsp Lemon juice
  • 1 tsp Lemon Zest
  • FOR THE SUGAR GLAZE-
  • 2-3 tbsp Powdered Sugar
  • 1 tbsp Lemon juice

Instructions

  • Preheat your oven on 180° before you start the process. Add Eggs, Vanilla essence and Sugar to a bowl. Whisk until creamy. To this add the dry ingredients one by one. Also add in the Lemon juice and the Zest too.
  • Fold in the dry ingredients into the wet one's carefully keeping in mind the cut and fold technique. Add this to an 8" Cake pan lined with a butter paper.
  • Bake for about 25-30 minutes or until the skewer inserted comes out clean. It hardly takes about 25 to 30 minutes or even a little less. Turn it out onto a serving platter as you prepare the simple Lemon glaze.
  • Mix both Lemon juice and Powdered Sugar really well until it becomes like a shiny liquid. Spread it out onto the Cake quickly as seen in the picture. Top with a little more of Lime and Lemony Zest. Slice and serve. Enjoy! Yum!
  • Delicious Cake is all ready to be devoured. Enjoy at Tea-time.
