  • cooked rice
  • Salt
  • Lemon juice
  • Urad dal
  • Chana dal
  • Oil/Ghee
  • Peanuts
  • Cashews
  • Mustard seeds
  • Grated ginger
  • Curry leaves
  • Whole red chilli
  • Turmeric powder
  • Asafoetida
  • Fresh Coriander leaves

Instructions

  • Soak urad dal and chana dal in water for 10 minutes. Then drain the water from the dals and set aside.
  • Heat oil in a pan. Once the oil is hot, add the peanuts to the pan. Cook the peanuts until roasted and they turn light golden brown. Remove peanuts on a plate
  • To the same pan now add mustard seeds and let them pop.Add the soaked & drained dal to the pan. Saute until they turn light golden brown.Add cashews,curry leaves,ginger and red chili. Saute for few seconds. Then add Asafoetida ,turmeric and mix well.
  • Add cooked rice along with the roasted peanuts. Add salt and lemon juice .Turn around a few times so the rice is completely Mixed.Add fresh coriander leaves and mix well Serve lemon rice with a side of pickle Thank u
