- Soak urad dal and chana dal in water for 10 minutes. Then drain the water from the dals and set aside.
- Heat oil in a pan. Once the oil is hot, add the peanuts to the pan. Cook the peanuts until roasted and they turn light golden brown. Remove peanuts on a plate
- To the same pan now add mustard seeds and let them pop.Add the soaked & drained dal to the pan. Saute until they turn light golden brown.Add cashews,curry leaves,ginger and red chili. Saute for few seconds. Then add Asafoetida ,turmeric and mix well.
- Add cooked rice along with the roasted peanuts. Add salt and lemon juice .Turn around a few times so the rice is completely Mixed.Add fresh coriander leaves and mix well Serve lemon rice with a side of pickle Thank u
