- Start by heating oil in a pan. Then add mustard seeds, curry leaves, chana dal/urad dal (lentils), turmeric, peanuts and sauté for 20 seconds. Then add cooked rice and sauté.
- This needs to be done over low heat and gently as you don’t want to mush the rice. Once everything is mixed, let this cook for a minute or 2 over medium heat (cover the pan if possible).
- After 2 minutes, add lemon juice, salt and 1 Tsp of oil. Sauté everything and let cook for another 2 minutes. Sprinkle some water and cook for 1 more minute and then turn off the heat. Mix everything once and transfer to a serving bowl and serve fresh.
