  • Maida
  • Suji
  • Milk powder
  • Powdered sugar
  • Cardamom powder
  • Sauf powder
  • Salt
  • Milk
  • Baking powder

Instructions

  • In a bowl mix maida, suji, milk powder, powdered sugar, cardamom powder, sauf powder, salt, baking powder. Add ½ cup milk gradually. Allow the batter to set for 30 mins. Now, add the rest of milk and make a smooth batter.
  • Now heat a pan, add 1 tbsp ghee and vegetable oil. Now, pour the batter with the help of a round spatula and fry the malpuas till golden brown.
  • For sugar syrup - Boil 1 cup of water with ⅔ cup of sugar add 2 whole cardamom. Boil it till the sugar syrup turns slightly sticky.
  • For rabri - Boil 1 liter milk in a thick bottom pan, at low flame till the milk becomes thick and creamy. Once the milk is reduced to half add 2-3 table spoons of sugar continue stirring the milk. It will take about 1hr to form the rabri.

Notes/Tips

1. Allow the malpua batter to rest atleast for few hours, to enhance the flavor. 2. The sugar syrup should not be too thick,it should be of 1 string consistency. 3. Boil the rabri at low flame and stir continuously, so that it should not stick at the bottom.
