Ingredients

  • 1/2 cup mango pulp
  • 1 ltr milk
  • 100 gms sugar
  • 65 gms rice flour
  • 1/2 cup condensed milk
  • 1/2 cup double cream
  • as required Pistachios chopped

Instructions

  • In a bowl add rice flour and little milk and soak.
  • In a wok add milk and bring to boil. Once boiling, simmer for 10 mins. Add rice flour soaked milk and keep stirring for 8-9 mins
  • Add sugar and keep stirring for 4-5 mins
  • Set aside. In a wok add mango pulp and sugar and bring it to boil. Mango pulp given directly to milk may spoil the milk hence this method
  • Set aside. Add the milk mix into mango pulp and stir well.
  • Add condensed milk and double cream to the mango mix and stir well.
  • Pour to Kulfi moulds. Add chopped pistachios. Freeze for 24 hrs
  • Demould and plate, add mango slices and some chopped pistachios and enjoy

Alphanso mango is the best to use for kulfi
