Ingredients

  • 1 cup Urad dal
  • 1 medium-size onion
  • 1/2 inch ginger, crushed
  • 1 sprig curry leaves, chopped
  • 10 peppercons, crushed
  • 1/2 tsp jeera
  • 2 tbsp fresh coconut, chopped
  • 1 tbsp rice flour
  • As per taste Salt
  • As Required Oil for frying

Instructions

  • In a bowl take urad dal. Wash with water 2-3 times and soak in water for 3-4 hours..
  • Drain all the water from urad dal and transfer urad dal in batch to mixer jar and grind to a smooth paste adding very little water. The batter should be thick and used very little water. Transfer the batter to the bowl and grind the remaining urad dal. Beat the batter continuously for 1-2 minutes to make it light and fluffy.
  • To the prepared batter add chopped onion and curry leaves, crushed ginger and peppercorns, jeera, coconut pieces, and salt. Mix everything well. Add rice flour and mix it again.
  • Heat oil in Kadai on medium flame. When oil is hot enough wet your palm with water and take a lemon size batter. Make a hole with your thumb and carefully slide it into the hot oil. Prepare other vadas and slide into the oil without overcrowding. Fry on both sides until golden brown. Strain it onto tissue paper.
  • Serve hot & crispy Medu Vada with coconut chutney and sambar.
