If you want to make it more rich, add khoya while adding sugar. You can also replace sugar with gur (jaggery) or unrefined sugar as an alternative in meethe chawal.

Ingredients

  • 1/2 cup ghee
  • 8 cashew
  • 5 almonds
  • 1 tsp raisins
  • 2 tsp Dry coconut
  • 2 pods cardamom
  • 4 colves
  • 1 cup water
  • 1/4 tsp saffron
  • 1/4 tsp yellow food color
  • 1/2 cup basmati rice
  • 1/2 cup sugar

Instructions

  • Firstly take large kadai heat 2 tbsp ghee and roast all nuts .
  • Roast a golden brown in low flame and keep a side.
  • In remaining ghee add cardamom, cloves ,saffron and 1 cup water and yellow food colour.
  • Mix well making sure the colour is mix well.
  • Further add 1 cup basmati rice and mix well and cook 10 minutes in medium flame.
  • Mix gently making sure rice is half cooked.
  • Further add sugar ,ghee and roast dry fruits.
  • Making sure mix gently sugar melt and cook 5 minutes medium flame.
  • Finally serve hot meethe chawal .garnish with dry fruits

Notes/Tips

Always use best quality long grain basmati rice and also soak the rice for good 1- 2 hours to get the best results.
