Methi Masala Khari

Ingredients

  • 1.5 cups maida
  • 4 tbsp chilled ghee (clarified butter)
  • 1/2 tsp baking powder
  • As needed oil for frying
  • 1/2 tsp ajwain
  • 1/4 tsp cumin seeds
  • 1 tsp kasoori methi
  • 1 green chilli chopped finely
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp sugar
  • as required Ice cold water for kneading

Instructions

  • Mix 2 tbsp chilled ghee in maida.Add salt, sugar,lemon juice and baking powder. Sprinkle kasoori methi, ajwain,cumin seeds and finely chopped green chillies.Make a well in the middle and pour ice cold water and knead into a tight dough.Cover the dough with a cling film and keep it in freezer for 20 minutes.Then divide dough into equal sized balls and roll out each ball into thin chapati or circular discs.
  • Make a thick paste of 2 tbsp ghee and cornflour. Chill it in fridge.Place each rolled out thin chapati one on top of another smearing ghee cornflour paste and fold as shown in the picture and refrigerate.Take out from fridge and roll again.
  • Again make 3 folds and roll into a circular disc.Cut into squares with a sharp knife.
  • Heat oil in a pan and fry masala khari in low to medium flame till golden brown and crispy.For a healthy version, these khari can also be baked in a pre-heated oven for 20 minutes.Both ways they are delicious and best served as a quick snack with tea.
