  • Brinjal
  • Fenugreek leaves
  • Oil
  • Garlic
  • Sesame seeds
  • Turmeric
  • Salt
  • Mustard
  • Kalonji
  • Cumin
  • Sugar
  • Red chilli

Instructions

  • Cut brinjal into 1 inch cubes.Smear pinch of salt and set aside.Clean,wash and chop finely methi leaves discarding roots.Mince garlic. Heat oil in a wok. Sprinkle 1 dry red chilli and cumin, mustard,kalonji,methi leaves. When they splutter,add minced garlic and fry till light brown,Add brinjal and fry on low flame till soft. Add turmeric, salt to taste and pinch of sugar.Toss and add methi leaves. Sprinkle sesame seeds and fry till dry. Garnish with fried red chilli and serve hot.
