Nolen gurer payesh is a winter classic delicacy made with date palm jaggery. It is  traditionally made with milk, Govinda bhog rice and date palm jaggery. This seasonal dessert is a combination of most exceptional and unique flavor of date palm jaggery with a rich and creamy texture.

Ingredients

  • 1.Full cream milk : 1½litre
  • 2.Nolen gur (Date palm jaggery) : ¾cup
  • 3. Gobinda bhog rice : ½cup
  • 4. Almonds  : Few

Instructions

  • Soak rice for half an hour.
  • Boil milk in a heavy bottom pan. Drain water from rice.
  • Add rice to the milk and cook it in medium low flame stirring continuously till rice is almost done.
  • Take off from the heat and add the date palm jaggery.
  • Now on a very low heat, keep on stirring till the jaggery melts completely.
  • Adjust the consistency. Garnish with almonds.
  • Serve this luscious dessert hot or cold with luchi.

Notes/Tips

1. Stir occasionally or else the milk will start sticking to the bottom of the pan. 2. Don't melt the jaggery on a high flame. The milk will get curdled.
