  • All purpose flour
  • Coconut sugar
  • Oats
  • Dark Chocolate chips
  • Walnuts
  • Coconut oil
  • Egg
  • Vanilla Extract
  • Salt
  • Dark Chocolate

Instructions

  • Mix the unrefined coconut oil with the coconut sugar. Refined coconut oil can be used but the unrefined oil tastes better. Add the egg replacer mixture and vanilla extract.
  • Sift the spelt flour with the salt into the batter. Add the quick oats and then the chocolate chips in that order. Put the batter into the fridge until it is hard.
  • While the batter is still hard, place tablespoon sized balls onto a baking tray about 2” apart. Use an insulated baking tray if possible. Bake for 20 minutes at 300 F. or 350 F. if you are using refined coconut oil.
  • Optional. Allow the cookies to cool. Melt the chocolate in a double boiler. Dip the tops of the cookies in the melted chocolate. Allow the chocolate to cool. Enjoy.
