Ingredients

  • Water
  • Powdered gelatine
  • Whipping Cream/Pouring Cream
  • Whole Milk
  • Nutella
  • Nolen Gur
  • Granulated Sugar
  • Vanilla Extract
  • Salt

Instructions

  • Make 2 separate Panna Cottas. Divide the entire list of ingredients into 2 equal parts except for the Nutella and The Nolen Gur (date-palm jaggery). Make half the recipe with Nutella and set it. Then make the other half with gur and set again.
  • In a small bowl, add the water and gelatine powder and keep it aside to bloom.
  • In a saucepan, combine half the quantities of the cream, milk, Nutella, sugar, vanilla, and salt.
  • Warm the mixture over low to medium flame till everything is well-combined and you see some steam. Make sure they don't start boiling.
  • Warm the bloomed gelatine in the microwave for about 10 seconds.
  • Add the gelatine to the cream mixture and give a good mix.
  • Now put the final mix with the gelatine in the refrigerator to bring It down to room temperature.
  • Meanwhile, prepare your ramekins/cups by brushing some cooking/cake spray in them.
  • Once cooled down, for a tilted setting (as shown in the photo), tilt the ramekin or cup inside a bowl to support it. Make sure the ramekin/cup sits tightly in the bowl, tilted to one side, and will not move.
  • Pour out the Nutella mixture with gelatine in the prepared ramekins/cups until it is half full.
  • Gently keep the half-filled ramekins/cups along with the bowl in the freezer to set quickly for a couple of hours or in the refrigerator for about 2-3 hours.
  • Once the Nutella Panna Cotta is set, start with the Nolen Gur or the jaggery flavored panna cotta.
  • Follow the exact same steps to make the Jaggery flavored panna cotta as the previous one. Except add the jaggery instead of the Nutella.
  • Once the mixture is ready to be frozen, make the tilted ramekins/cups straight and pour out the jaggery mixture Into them.
  • Put them back in the refrigerator for one final setting.
  • Once both the Panna cotta's flavors are Completely set, feel free to garnish it with shaved chocolate, fresh berries, or anything you fancy. Garnishing is optional. Feel free to dig in right away as well, if you want.

Notes/Tips

Tilting is optional. You can keep your ramekins/cups straight and make 2 horizontal layers of Panna Cotta. Or, you can make either of the 2 flavors as well - Nutella or Gur. Just use the entire quantity of the ingredients for the mix. Refrigerating the mix for setting yields a creamier dessert. But freezing is fine too. you can also use this recipe to make Plain Vanilla Panna Cotta as well. Just omit the Nutella or gur and adjust the sugar quantity accordingly.
